Method
- Preheat the oven to 320°F and line baking sheets with parchment paper.
- Cream the butter and brown sugar until light and fluffy.
- Beat in the egg yolk and vanilla until fully combined.
- Add the cake flour, cinnamon, baking powder, and salt, mixing just until combined.

- Fold in the oats and raisins.
- Scoop tablespoon-sized portions of dough, roll into balls, and place on the baking sheets.
- Flatten each ball slightly with a fork.
- Bake for 25–30 minutes until lightly golden.
- Transfer to a cooling rack and let cool completely before serving or storing.
Notes
For a different texture, try swapping the brown sugar for castor or confectioners’ sugar - confectioners’ sugar gives a more tender, crumbly cookie, while castor sugar produces a crisper, denser bite. Add-ins like chocolate chips, nuts, or other dried fruits can be mixed in to suit your taste.
