Ingredients
  

  • 9 tbsp 125g unsalted butter, room temperature
  • 7 tbsp 90g brown sugar
  • 1 egg yolk
  • ½ tsp vanilla extract
  • 1 cup 120g cake flour
  • ½ tsp ground cinnamon
  • ¼ tsp baking powder
  • ¼ tsp salt
  • 1 cup 100g quick oats
  • ½ cup 75g raisins

Method
 

  1. Preheat the oven to 320°F and line baking sheets with parchment paper.
  2. Cream the butter and brown sugar until light and fluffy.
  3. Beat in the egg yolk and vanilla until fully combined.
  4. Add the cake flour, cinnamon, baking powder, and salt, mixing just until combined.
  5. Fold in the oats and raisins.
  6. Scoop tablespoon-sized portions of dough, roll into balls, and place on the baking sheets.
  7. Flatten each ball slightly with a fork.
  8. Bake for 25–30 minutes until lightly golden.
  9. Transfer to a cooling rack and let cool completely before serving or storing.

Notes

For a different texture, try swapping the brown sugar for castor or confectioners’ sugar - confectioners’ sugar gives a more tender, crumbly cookie, while castor sugar produces a crisper, denser bite. Add-ins like chocolate chips, nuts, or other dried fruits can be mixed in to suit your taste.
